Chicken of the Woods Burgers
Chicken of the Woods is one of the most sought after mushrooms, appearing as a tiered yellow bracket in Spring and Autumn. With a texture comparable to chicken, it lends itself perfectly to being battered and fried before becoming the main event in a burger.

This mushroom is edible for most of the population, but causes gastric upsets in some people and must be cooked before consumption. For first timers, cook and try a small amount and wait several hours before trying a full portion.

Ingredients
Chicken of the Woods mushroom
Egg
Flour
Salt
Pepper
Burger buns
Fillings of choice e.g green pesto, mustard, cheese, basil, onion, relish, jalapenos.
Method
Slice the mushrooms into steaks about 1" thick and to your desired width, the natural shape of the tiered brackets makes this step nicely intuitive.
Steam or boil the mushroom for ten minutes and cool.
Whip your egg in a bowl and coat the slices in the mixture.
Transfer slices to a bowl of flour and coat.
Fry in a pre heated pan with plenty of oil or butter until golden on each side. Season to taste as it fries.
Build your burger with your desired fillings and enjoy. We like salad such as rocket paired with fresh basil and green pesto and a little mozerella.
